Culinary Classes in the Oliver Center

Kay's Kitchen is Set-Up and Ready for 2012 Cooking Classes!

As Director of the Culinary Program for the new Elizabeth Lane Oliver Center for the Arts (formerly the old U.S. Coast Guard Station in Frankfort, Michigan), Chef Jim is not only teaching classes, he's bringing in visiting chefs and culinary experts to teach as well.  The following classes are scheduled for Kay's Kitchen, the new teaching kitchen in the Oliver Center.  Unless otherwise indicated, all classes run approximately 2 to 2 1/2 hours long.  Students will be able to sample all recipes demonstrated during the class and will go home with copies of all the recipes. 

To enroll in any of these classes, please contact the Crystal Lake Art Center at 231-352-4151.  There are two prices listed:  art center member price/non-member price.

  • June 7, Thursday, 2:00 p.m.      "Hors d’oeuvres"      Chef Jim Voltz      $50/$60                                         Let the summer entertaining begin!  Get great tips on hosting successful parties while Chef Jim Voltz demonstrates five hors d’oeuvre recipes:
    • Cucumbers stuffed with Crabmeat
    • Parmesan Crisps
    • Mini Quiches
    • Ham, Gruyere & Dijon Palmiers
    • Stuffed Dates
  • June 18, Monday, 1:00 p.m.     "French Bistro Secrets '      Chef Keil Moshier       $50/$60                        Chef/Owner of highly rated Traverse City restaurant, Patisserie Amie/Chez Peres, Keil Moshier, comes to Kay's Kitchen to share some of his popular French Bistro recipes and techniques with the class.
  • June 21, Thursday, 5:30 p.m.      "Knife Skills"     Ed Bartush      $50/$60                                                     Ed Bartush is a specially trained knife skills expert and a Manager for Wustoff Trident of America, maker of some of the finest knives in the world.   This hands-on class will give students the chance to practice their new chopping, slicing, and dicing skills as Ed demonstrates.  Students will also learn what to look for when buying fine knives and how to care for them once you get them home.



  • July 12, Thursday 2:00 p.m.        "Fish 101"          Chef Jim Voltz        $50/$60                                                        Are you one of the many who are intimated at the thought of buying and preparing fish?  Than this is the class for you.  Chef Jim Voltz gives lots of tips on buying, storing, and preparing fish.  He also demonstrates three ways to cook and serve fish:  Poached, baked, and grilled.
  • July 26, Thursday 2:00 p.m.       "Chicken 101"      Chef Jim Voltz       $50/$60                                                  Learn new ways to prepare this menu staple.  Chef Jim Voltz shows you three delicious ways to cook this versatile bird:  poached, roasted, and paillard.  Students will also learn the proper technique for cutting up a whole chicken.



  • August 9, Thursday 6:00p.m.      "Wine Tasting"      Wine Master Jeff Barbour      $50/$60                              Sample several local and international wines as Wine Master Jeff Barbour explains the differences in the grapes, growing regions, and processing.  This delightful evening will also include light hors d'oeuvres and discussion on wine/food pairings.  Whether you consider yourself a wine connoisseur or don't know the difference between a red and a white, there's something to learn here.

    Jeff Barbour is proprietor of one of the leading wine stores in Connecticut, New Canaan Wine Merchants. Jeff's 25 year career in wine includes working for a premier importer and negotiant, Illinois and Connecticut distributors of fine wines, and as COO/EVP of Morrell and Company in New York City.  Jeff holds an Advanced Certificate from the Wine and Spirits Education Trust in London and a BA in Education and Vocal Performance from the Universty of Illinois. He teaches weekly classes in his store on all varietals and regions and presents wine in an approachable and down-to-earth manner.  Jeff has the great fortune of marrying into a family who has been visiting this part of Michigan since the 1940s.

  • August 16, Thursday 2:00 p.m.       "Stir Frys"        Chef Jim Voltz        $50/$60                                                        After this class, stir frys will become a "go to" meal in your house.  Students will learn easy stir frying techniques while Chef Jim Voltz demonstrates two of his favorites:  a spicy shrimp stir fry and a wonderful chicken stir fry.
  • August 23, Thursday 2:00 p.m.     "Vegetarian & Vegan Cooking"      Chef Jim Voltz      $50/$60                             Are you a vegetarian or a vegan, or have to cook for someone who is?  Get new ideas and techniques in this class as Chef Jim Voltz discusses some of the challenges and prepares a meatless cassoulet and vegetable stew that even the biggest carnivores will love.

  • September 13, Thursday 2:00 p.m.       "Fall Vegetables"        Chef Jim Voltz        $50/$60                                     It's that time of year when Farmers' markets are full of those beautiful root vegetables.  But do you get them home and then wonder what to do with them?  Chef Jim Voltz has plenty of suggestions and shares them in this class where he will demonstrate how to roast and puree vegetables; and also demonstrate recipes for a delicious vegetable casserole, and a sweet potato hash. 
  • September 27, Thursday 2:00 p.m.     "Stews/One-Dish Meals"      Chef Jim  Voltz        $50/$60                            Cooks can never have too many crowd pleasing one-dish recipes on-hand.  See Chef Jim Voltz prepare some of his favorites, including a to-die-for Chicken Leek Stew.

  • October 11, Thursday 2:00 p.m.        "Soup's On"        Chef Jim Voltz     $50/$60                                                 There's nothing more warming than a delicious bowl of homemade soup on a cool fall day.  Chef Jim Voltz prepares two of his favorites, along with the perfect accompaniment, homemade biscuits.
